- Boil sweet potato complete in skin for 40-50 minutes, or till done. Run chilly water over the sweet potato, and take away the skin.
- Break aside sweet potato in a bowl. Add butter, and blend properly with mixer. Stir in sugar, milk, eggs, nutmeg, cinnamon and vanilla. Beat on medium speed till combination is smooth. Pour filling into an unbaked pie crust.
- Bake at 350°F (~180°C) for 55-60 minutes, or till knife inserted in heart comes out clear. Pie will puff up like a souffle.
- Cool on a wire rack for 1 hour. Refrigerate for no less than 3 hours earlier than serving or serve at room temperature. Refrigerate leftovers.
