Ingredients

  • 3 pounds medium red potatoes – halved

  • 1 cup mayonnaise

  • 1/2 cup sour cream

  • 3 hard-boiled large eggs – chopped

  • 1 celery rib – finely chopped

  • green onions – sliced

  • 1 tablespoon dijon mustard

  • 1 teaspoon dried dill

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

instructions

  • Bring a large pot of salted water to a boil. Add potatoes and cook till tender or fork-tender, about 15-20 min. Transfer the potatoes to a colander and strain thoroughly. Set aside to cool.
  • In a large bowl, mix the potatoes, eggs, celery and onion. In a small bowl, mix the remaining ingredients. Pour over potato combination and stir gently to coat. Chill for an hour before serving.
