3 pounds medium red potatoes – halved
1 cup mayonnaise
1/2 cup sour cream
3 hard-boiled large eggs – chopped
1 celery rib – finely chopped
3 green onions – sliced
1 tablespoon dijon mustard
1 teaspoon dried dill
1 teaspoon salt
1/2 teaspoon black pepper
- Bring a large pot of salted water to a boil. Add potatoes and cook till tender or fork-tender, about 15-20 min. Transfer the potatoes to a colander and strain thoroughly. Set aside to cool.
- In a large bowl, mix the potatoes, eggs, celery and onion. In a small bowl, mix the remaining ingredients. Pour over potato combination and stir gently to coat. Chill for an hour before serving.
